The Cooking Process

1) Place some preheated coals on the floor of the oven with fire tongs.
2) Place your pizza dough on an iron or stone slab in front of you and place it over the top of your open door which is in front of you.
3) Wait until the dough has risen sufficiently before closing both doors at once so that it can cook quickly enough
