Over the past few years I have gotten into making my very own Christmas cakes. Last year I made one. This year I’m attempting two! I always use the same easy Christmas cake recipe. I’m not sure how I came about it. I think over the years I have added my own bits to it. Now it really is the ultimate easy cake recipe. I think the most effort needed is to weigh out all the ingredients.
Ingredients for your Ultimate Christmas Cake
- 525g Currents
- 225g Sultanas
- 225g Raisins
- 110g Mixed Candied peel finely chopped
- 165g Glace Cherries halved
- 300g Plain Flour
- Pinch of Salt
- 1/2 tsp Mixed Spice
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
- 300g Butter
- 300g Soft Brown Sugar
- Zest of half a lemon
- 6 Large eggs
- 3 tbsp Brandy
I love this time of year. A Lazy night in is exactly what you need after a busy day at work. With the dark evenings and cold weather, tucked up in front of the TV is just perfect.
Now if you are like me I must have snacks while I’m watching TV especially if it’s a great film!

Growing your own food is an excellent way to slash money off your food shopping bill, and is a fun and productive hobby to have. Knowing you’ve grown something from scratch is always a proud moment, and it can really help you to appreciate where your food comes from. We can be so used to seeing it packaged in plastic at the supermarket that it’s easy to forget how miraculous it is when fresh produce grows from tiny seeds! While anything you can get going in the garden and enjoy consuming is beneficial, there are some crops that are particularly good. This is because they preserve well, meaning you can enjoy the fruits of your labour long after the growing season comes to an end.
Strawberries are easy to grow in the garden, and are a staple for food storage. Big batches of strawberry jams and jellies are ideal for baking with, or just to slather onto hot buttered toast throughout the year. You could also dry them, and make homemade granola or just use them for cereal toppings. Home dried fruit will last up to a year, so you’ll have plenty of time to use up a big stash. You could go a step further and consider a greenhouse for your garden wooden greenhouses are popular choices. Growing strawberries under cover like this will produce fruit a whole month earlier.

I love American inspired food. Burgers, wedges, pasta, waffles all of it! When we got to try out Iceland’s new range of American foods called The Shack, my husband and I were excited. I have never been to America so have never tasted real authentic American food. We did go to Canada over 6 years ago and that’s the closest we have been.
The Shack meal range is perfect for Autumn. A warming comfort food range that is ideal for sharing with friends and family. I cooked up a few things for a cosy night in with my husband and a film. It was lovely to chat about how the food tasted while watching TV.
I love to bake and cook in my kitchen. But sometimes I’m limited due to the time I have spare. Nowadays we have some incredible technology for the kitchen, but sometimes the simple kitchen gadgets really are the best.
Here are a few of the gadgets that everyone absolutely needs in their kitchen. Just to make life that little bit easier.
A Kitchen Slicer
One of the most time-consuming parts of putting a dish together is preparing the vegetables. It can be such a chore. Especially when you’ve already had a busy day, and just want to put together something healthy but quick. Having a kitchen slicer on hand will save you time and hassle. When you can prepare fruits and vegetables quickly, it means you’re much more inclined to include more of the good stuff into your diet. Much cheaper than a food processor and just as efficient (if not more) when it comes to slicing. Plus if you have a smaller kitchen it takes up less space so you don’t have to clutter up your work surfaces with extra appliances.
As you all know I love cake. So it’s a great little treat being asked to review, oh and of course taste a couple of cupcakes from Caketoppers.
I was asked to send in an image for the caketoppers and so I chose my snazzy blog logo! You know from my previous post on designing a mobile phone cover that I like to personalise everything.
I was sent a classic sponge and a chocolate sponge cupcake. The chocolate sponge came in a gold foil case with a chocolate fondant icing on top then above that was the icing disc with my logo on. The classic sponge came in a silver foil case with white fondant icing and then the disc on top.
